Chef Joel treats freshness as sacred: the fish is handled at precise temperature and seasoned just enough for the sea and citrus notes to shine, finished with a few drops of olive oil and crystals of Bà Rịa salt scattered table-side.

The zesty acidity of yuzu and kumquat, set against the gentle richness of tuna, calls for a bright, mineral white.
