Herb-Crusted Lamb Rack in Hanoi — Carré d'Agneau at Maison Vie

Maison Vie serves herb-crusted lamb rack — the carré d'agneau with a Vietnamese-herb crust, an aromatic reduction and celeriac purée — at 28 Tang Bat Ho, Hai Ba Trung, Hanoi. It is 990,000 VND on the à la carte menu, and a main-course option of the Menu Dégustation with a 150,000 VND supplement.

What is carré d'agneau?

Carré d'agneau — the whole rack of lamb on the bone — is one of French cooking's most elegant preparations: the rack roasts whole and is only then carved into chops, so the meat keeps its moisture and its even rosy blush. The French tradition wraps the rack in a herbed crumb crust; at Maison Vie that crust is built from Vietnamese herbs — the East–West signature of the house: French technique, Vietnamese terroir.

The standard is set by Chef Joel F. Tisserand, who has spent 40 years at the stove across France, England, China and Southeast Asia: the lamb stays tender-pink, the herb crust lifts rather than masks the meat, and the jus is slowly reduced until deeply aromatic.
