The chef: from Paris to the Beijing 2008 Olympics
Chef Joel F. Tisserand started as a commis and worked his way up to chef de cuisine in Paris, Oxford and London. More than 40 years later, that path has run through hotel, restaurant and private-club kitchens in London, Shanghai, Hong Kong, Beijing and Southeast Asia.
The milestone guests ask about most: at the Beijing 2008 Olympics he personally served the French Delegation, working alongside the Lenôtre Paris team.
