What does Wagyu MBS 6–7 mean?

MBS — Marble Score — is the international scale for grading marbling in beef: the higher the score, the more densely the fine white veins of fat run through the muscle. At MBS 6–7 the marbling is rich enough to melt the moment it meets heat, carrying its buttery flavour into every fibre — the band many chefs consider the finest balance between richness and true beef taste. With meat of this class, the French kitchen's philosophy is minimal intervention: sear it precisely, season it justly, and let the ingredient speak.

At Maison Vie the standard is set by Chef Joel F. Tisserand, who has spent 40 years at the stove across France, England, China and Southeast Asia: the beef is seared to medium so the marbling melts completely while the juices stay locked in, finished with the restaurant's own slow-reduced signature jus.
